What makes a chocolatier's chocolate bar?
A bar is built in three stages: a chocolate, a nut paste, then whole or crushed inclusions. That is where the contrast between melting and crunchy textures comes from.
In a chocolate bar, the filling can contain other vegetable fats, such as palm oil. Our bars contain none: their fat comes from cocoa butter, nuts and, for two of them, butter. Their chocolate meets the Ingrédients Nobles label: pure cocoa butter, no added flavourings, no soya and no GMOs.
Which chocolates and inclusions go into our chocolate bars?
Five 30 g mini-bars, each with its own combination.

Milk chocolate bars, 45%
Three bars share this chocolate, rich enough in cocoa to stand up to the inclusions without overpowering them. Boost de Plaisir adds raisins and almonds, Tendre Moment a praline. Praline lovers will also enjoy our praline chocolate bars.
Mon Truc à Moi is the most distinctive, with its nougatine and cocoa nibs: pieces of roasted, crushed cocoa beans, with notes more powerful than the chocolate around them. To enjoy more milk chocolate, discover our milk chocolate tablets and our chips for baking.
Dark chocolate bar, 72%
Pause Insolente is the only dark bar in the range. Its 72% chocolate holds its own against the candied orange peel, with the crunch of a wafer. It is the bar to recommend to any dark chocolate lover.
Ivory chocolate bar, 33%
Coup de Fouet is all about acidity. Its gentler ivory chocolate calls for bright fruit: candied lemon, banana and raspberry. It is the only bar in the range built on this contrast.
Allergens and dietary requirements
All our bars are made with a hazelnut paste. Reading the label is therefore essential for anyone allergic to tree nuts.

None of our bars contains peanuts, either in the recipe or in the traces listed on the product pages. The full ingredient list is on each product page and on the packaging, which is the reference.
All of them contain milk: none is suitable for a vegan diet. Although made with dark chocolate, Pause Insolente contains milk and gluten through its wafer.
Bars made at the Manufacture
The Manufacture brings together the crafts of Cacaofèvier®, confectioner and chocolatier under one roof. It makes its own chocolate, from bean to chocolate, and works directly with growers, as described in our responsible commitments.
How to enjoy and store chocolate bars
Store your bars between 16 and 18°C, somewhere dry and away from light, until the date printed on the packaging. Avoid the fridge: its humidity dulls the chocolate. If a bar has been kept somewhere cool, take it out about ten minutes before eating.
A white film is almost always caused by a temperature change: the cocoa butter rises to the surface, without affecting the taste. The bar is still good, and crumbles beautifully over ice cream.
Frequently asked questions about chocolate bars
What is the difference between a chocolate bar and a chocolate tablet?
A tablet is broken and enjoyed square by square. A bar is a construction: a chocolate, a nut paste and inclusions, made to be eaten in one go.
Do the chocolate bars contain peanuts?
No. Our five bars contain no peanuts, either as an ingredient or as traces, according to their product pages. They do contain hazelnuts, and four of them also contain almonds.
Which bar goes best with coffee?
Pause Insolente, with 72% dark chocolate, stands up to the bitterness of an espresso. For a long coffee or a cup of tea, Mon Truc à Moi and its cocoa nibs work well.
Is a chocolate bar an energy bar?
No. An energy bar is a sports nutrition product designed for exercise. Our bars are chocolatier's confectionery, made for the pleasure of tasting.
What is the difference between cocoa nibs and nougatine?
Cocoa nibs are pieces of roasted, crushed cocoa beans, with no added sugar: they bring bitterness and a dry crunch. Nougatine combines caramelised sugar and almonds. Mon Truc à Moi brings the two together.
Can I give an assortment of chocolate bars as a gift?
Yes, their individual format makes it easy. They pair well with our chocolate bites, praline rochers or bags and pouches, or alongside a gift box. The milk chocolate versions are often a better choice for children than Pause Insolente.
