Sublime, a lush backdrop of infinite greens forms a patchwork of small farms that crown El Jardín.

The Plantation extends into the Meta, south of Bogota.

Straddling the plains of the Rio Ariari River and the La Macarena Nature Reserve. Everything in this landscape is conducive to the cultivation of exceptional cocoa. The roots of the cocoa trees of El Jardín intertwine with those of surrounding trees and groves. The resulting root exchanges imbue the cocoa beans with woody and fruity fragrances.

The beans are spread out in antique wooden tubs

The beans are protected from the sun by foliage drapes and ferment for 6 days as soon as they are released from their pod. They cluster together, offer themselves to each other, exchanging their fragrances and their flavours that they combine. The favourable warmth of the thick wooden steam boxes produces a characteristic and inimitable fermented aromatic note, as complex as it is subtle.

The Manufacture specifically focuses on the roasting stage for the beans of the El Jardín Plantation .

Carried out at low temperature, this roasting brings out the aromatic notes of this surprising cocoa. This process is unique: the result of a precise combination of craftsmanship and innovation. Masterfully executed, it builds the taste of this exceptional chocolate and participates in its enhanced scope.

The aromatic profile of El Jardín Plantation Chocolate is multi-faceted, like the lands of its birth, and just as characteristic.

The top notes form an unexpected patchwork of honey and red berries that reveal blond tobacco fragrances. In a cloud of delicately toasted and peppery notes, dried tomato and caramel unfold into the heart notes. The finish is woody, dotted with liquorice, mentholated before fading away in a comforting impression of freshness.
