WHAT IS PLANTATION CHOCOLATE?
A comparison with viticulture is the best way to understand the uniqueness of a Plantation Chocolate. This designation refers to a chocolate made from Alles cocoa beans from a single plantation.
It was the Manufacture CLUIZEL that invented this designation in 2000. The result is a unique and characteristic taste. This is the ultimate step in the search for the original notes of cocoa beans.

This makes Plantation Chocolate superior to ‘origin chocolate’, where the cocoa beans come from a single country, but also to ‘cru chocolate’, where the beans come from a single region.
It is similar to an estate wine: a single terroir that shapes incomparable aromatic profiles of unrivalled finesse and richness; the specific characteristics of a particular soil are revealed in these profiles that are as complex as they are subtle.

Born in a jungle of mango trees, the roots of the cocoa trees have imbued this unique flavour, both sweet and exotic. The Plantation takes its name from the memory of this jungle, which was known as Mangamaro: ‘where there are many mangoes’.

Straddling the plains of the Rio Ariari river and the La Macarena nature reserve, the roots of the cocoa trees at El Jardín join those of the surrounding trees and groves, filling the cocoa beans with woody, fruity fragrances.

The tempestuous Atlantic Ocean, all around us, sweeps over the Bahia region, impregnating it with its powerful spray and justifying the intense flavour of this bar. This balancing effect gives rise to the aromatic fermentary note that makes a chocolate so unique.

The equatorial climate and the ocean that besiege São Tomé offer a cocoa enriched with powerful, iodised sea spray and exotic fragrances. The chocolate created by Manufacture CLUIZEL is a mineral hybrid, injected with wild and herbaceous flavours.

In this part of Mexico, cocoa trees grow in the shade of centuries-old Ceibas, the totem trees of the indigenous peoples who once occupied this land. The plantation's unique ecosystem is self-sufficient, producing cocoa naturally imbued with the fragrance of exotic fruits.

Fragrances and flavors are the legacy of a lush terroir and a generous past. The trees at Plantation La Laguna come from the first Mayan exploitations. Even today, root exchanges bring fruit to the beans while the proximity of the falls fills them with refreshing notes.

On the small island of Hispaniola, the Los Anconès plantation enjoys an ideal tropical climate and offers fruits with a unique taste, products of meticulous work and an extraordinary terroir at the origin of a particularly rich and assertive taste.

A CHOCOLATE DEFINED BY ITS COMPLEXITY
Making Plantation chocolate requires dedication and intransigence. Three factors guarantee its quality and distinctive character: terroir, fermentation and roasting.


The fermentation stage is decisive and is always carried out in the plantations.
Tree beans of all ages ferment together. Freshness and sweetness are balanced by depth and strength of character. This balancing act gives birth to the aromatic fermenting note that makes a chocolate so unique. The beans, married in this way, spend more than five days in light wooden crates.

A unique roasting carried out at the Manufacture
To avoid altering the multiple aromatic notes of cocoa and retaining all of its nutritional value, the Manufacture has stood out by developing different roasting processes specific to each region. Slow, more homogeneous and carried out at low temperature, these processes have been developed so that each bean can fully restore its multiple notes. In the same way, it sticks to its commitment Noble Ingredients which guarantees that only pure cocoa butter, Bourbon vanilla pod and sugar are used in the composition of the recipe.
For exemplary traceability, the cocoa beans are sent from the plantations to the Manufacture's Norman workshops directly after they have dried. Each of the stages that mark the making of a Plantation Chocolate is thus perfectly mastered.

Fruits, spices, tobacco, liquorice... sweet, suave or smoky, spicy power, every variation is possible. There are several reasons for this richness. The fermentation and roasting processes naturally play a part in revealing these extraordinary aromatic profiles, but it is the terroir, in the broadest sense, that is responsible for their plurality.
The chocolates from Plantation Vila Gracinda and Mokaya, for example, elegantly reflect the influences of the volcanic soils from which they originate.
