For 20 years, each of Our chocolates from Plantation has highlighted its own story and the story of how the Manufacture came to meet the families of the planters with whom it works. The ties that bind them are based on dialogue, respect and constant exchange.

The beans are spread out in old wooden tubs.

Protected from the sun by leafy hangings, the beans ferment. As soon as they are released from their pods, they are placed in the tubs, where they ferment for six days. They agglomerate, offering each other their fragrances and flavors, which they unify. The favourable heat of the thick wooden ovens gives rise to a characteristic, inimitable aromatic fermenting note, as complex as it is subtle.

The Manufacture has specially designed the roasting stage for beans from the El Jardín plantation.

Carried out at low temperature, this roasting process brings out all the aromatic notes of this surprising cocoa. This process is unique: the result of a precise blend of craftsmanship and innovation.
